Can Rabbits Eat Bread - Starch in a Hindgut Fermenter

No. There is no toxin in bread and nothing in it that a rabbit's body reacts to as a poison, which is precisely why this question needs a proper answer rather than a warning label. The problem is that bread is starch, and a rabbit is a fermentation vessel that runs on fibre.
That sounds like an abstraction. It is not. There is a specific, named mechanism by which carbohydrate slows a rabbit's gut, and a second specific mechanism by which it feeds the wrong bacteria, and both are in the veterinary literature rather than in folklore.
What the gut is built to do
The Merck Veterinary Manual's material on rabbit nutrition is unusually clear on this point: "the clinical importance of a diet high in long particle length is to maintain the motility of the cecum and colon."
Long particle length means hay, and specifically hay that has not been chopped into dust. The fibre is not there for nutrition in the way people usually mean. It is there because the physical presence of long particles is what keeps the caecum and colon moving.
The manual also describes caecotrophy, the process by which a rabbit reingests soft faeces expelled from the caecum, taking in microbial protein, B vitamins and volatile fatty acids. It adds a caveat worth knowing, that "amino acids obtained in this manner make only a minor contribution to the rabbits' protein needs", so the system is not a substitute for a proper diet.
What none of that describes is an animal with a use for bread.
Two named mechanisms, not a vague worry
Here is the part that makes this page worth reading rather than skimming.
First: "carbohydrates will actually inhibit motilin release." Motilin is a signalling molecule involved in gut movement. Carbohydrate does not simply fail to help motility. Merck describes it as inhibiting the signal that drives motility. Bread does not sit inertly in a rabbit alongside the hay. It works against the thing the hay is there to do.
Second: "excess starch can also be substrate for the proliferation of pathogenic bacteria such as Clostridium spiroforme, which produce a potent toxin." The caecum holds a microbial population that is doing useful work, and the composition of that population depends on what arrives. Starch feeds organisms that fibre does not.

The third problem, which is about what bread replaces
This one is reasoning from two sourced facts rather than a quotation, and we are labelling it as such.
A rabbit that fills up on bread eats less hay, because appetite is finite. Merck's account of rabbit disease describes what a shortage of fibre does, and it is more concrete than most owners expect. "A high-fiber diet helps to create a fiber mesh that prevents the GI contents from becoming too dense so that hair can more easily pass through the upper GI tract along with the mesh of fiber." It goes further: "hair chewing itself is generally a result of low fiber in the diet and can be corrected by increasing the fiber or feeding hay along with the pellets."
So low fibre does two things at once. It removes the mesh that carries ingested hair through, and it makes the rabbit more inclined to chew hair in the first place. Bread does its damage twice over, once through what it is and once through what it displaces.

Why the timescale matters more than the amount
With most animals and most foods, a small quantity of the wrong thing produces a small consequence. Rabbits are less forgiving, and the reason is the loop above rather than the food itself.
Merck describes the cascade: decreased food intake reduces water consumption, gut contents become pasty, and "the resulting decreased food intake and GI hypomotility cause an increased cecal pH and altered cecal microflora, creating cecal dysbiosis". VCA's owner facing account adds that when a rabbit stops eating, the pH change "favors the growth of gas-producing bacteria", which produce painful gas that suppresses appetite further.
Then the accelerant: Merck states that "a decrease in energy uptake will produce hepatic lipidosis relatively quickly in rabbits, which in turn decreases food intake."
And the timescale, from VCA, which is the sentence to remember: "a rabbit that is not eating can progress from just feeling poorly to developing a life-threatening illness in a matter of hours."
That is why the useful question is not how much bread is too much. It is whether your rabbit is still eating hay and still producing normal droppings, and if the answer to either is no, it is a phone call now rather than in the morning.
We do not publish an amount of bread a rabbit can have. Not because we are being cautious for the sake of it, but because the sources describe mechanisms rather than thresholds, and inventing a threshold from a mechanism is exactly the sort of thing that gets repeated forever afterwards. If you want to know what your particular rabbit can be offered, that is a conversation with a vet who sees rabbits, and it is worth having at a routine appointment rather than in a crisis.
The bread that turns up, and the other ingredients
Rabbits do not raid bread bins. Bread reaches them because a person hands it over, usually kindly, and often with a specific belief that it is a treat or that it helps with something.
The versions that appear most are a crust from a sandwich, dry bread put out for garden birds and reached by a house rabbit with outdoor access, toast at breakfast, and cereal or biscuit shaped things treated as equivalent to bread. Anything with dried fruit in it adds a separate question, and anything with garlic or onion on it adds another.
Raw dough is a different matter again and belongs to a different mechanism entirely, which is set out on the bread page for dogs. If a rabbit has been at raw dough, say the word raw when you ring.
What to have ready when you ring
That last line catches rabbit owners out more than anything else, because not every practice takes rabbits out of hours. Find out before you need it and write it in the emergency folder. Before you call the vet covers the call, and the emergency vet finder is where to start on the last item.
Questions people actually ask
My grandmother always gave her rabbits bread and they lived for years. Was she wrong?
She may well have had rabbits who tolerated it, and survivorship is a poor way to test a diet. What has changed is not the rabbits but what is documented about them, and the two mechanisms quoted above are specific and published. The honest answer is that it was a common practice, that we now have a reason to think it works against the gut, and that nobody is asking you to feel bad about a grandmother.
Is dry bread better than fresh?
Drying removes water, not starch, so neither of the two named mechanisms changes. Dry bread also has a long association with feeding garden birds, which is how it ends up somewhere a rabbit can reach it.
My rabbit ate a crust yesterday and is completely normal today. Do I need to do anything?
Watch the tray rather than the rabbit. Reduced or absent droppings is the observation that matters, and VCA lists it first among the warning signs. If the droppings are normal and the hay is going down as usual, note it and mention it at the next appointment.
What should I offer as a treat instead?
That is a diet question for a vet who sees your rabbit, and this page is not going to hand you a list. What the sources are consistent about is that long fibre is the foundation and that things which displace it are working against the animal. Is this the same for other animals in the house?
No, and the difference is the whole point. A dog and a rabbit meeting the same slice of bread are having entirely different experiences, because only one of them is running a caecal fermentation system. Bread for cats is different again.
